2 tablespoons Vegetable Oil
2 tablespoons Sugar
1 tablespoon Oyster Sauce
1 tablespoon Soy Sauce
1 cup Water
2 tablespoons Potato Starch mixed with 2 tablespoons Water (for thickening)
For the Noodles and Vegetables:
500g fresh or dried Korean-style Noodles
1 cup diced Onion
1 cup diced Zucchini
1 cup diced Potatoes
1/2 cup diced Carrots
1/2 cup diced Green Bell Pepper
2 tablespoons Vegetable Oil (for stir-frying)

Preparation:
- Prepare the Vegetables:
- Dice the onion, zucchini, potatoes, carrots, and green bell pepper into small, uniform pieces.
- Cook the Noodles:
- Cook the Korean-style noodles according to package instructions. Drain and set aside.
- Prepare the Jajang Sauce:
- In a pan, heat vegetable oil over medium heat. Add the black bean paste and stir-fry for 1-2 minutes until fragrant.
- Add sugar, oyster sauce, and soy sauce to the pan. Continue to stir-fry for another 2 minutes.
- Pour in 1 cup of water and bring the mixture to a simmer. Allow it to cook for 5 minutes.
- Slowly add the potato starch mixture to the sauce, stirring continuously until it thickens. Simmer for an additional 2-3 minutes. Set the Jajang sauce aside.
- Stir-Fry Vegetables:
- In a separate pan, heat 2 tablespoons of vegetable oil. Stir-fry the diced onion, zucchini, potatoes, carrots, and green bell pepper until they are slightly tender. Season with salt and pepper to taste.
- Combine Sauce and Vegetables:
- Add the prepared Jajang sauce to the stir-fried vegetables, ensuring an even coating. Simmer for an additional 5-7 minutes until the vegetables are fully cooked.
